Holding onto Summer





I woke up this morning to glorious sunshine however it was quite chilly here on Long Island hence the multitude cups of Green Mountain Breakfast blend coffee - nothing like a warm cup of jo while blogging with the sunshine. Although it feels like fall already the first day of fall is actually not until Wednesday!!!





My eats over the past week have been nothing too exciting - trying to enjoy the last of the late summer produce and fruits. Precisely my impulse to buy a fresh pineapple despite the colder weather. Pineapples not only taste good but are a great source of Vitamin C and also contain bromelin - this is an enzyme that helps aid in the digestion of protein, helps prevent indigestion and also has antiinflammatory properties - great for those suffering from any arthritis or sports related sprains or other injuries.




I personally like my pineapples very sweet - slightly overripe if you must!!!! How do you pick a ripe pineapple????? Ive heard million of different tricks - if you can pick a leaf easily from the center of the stalk - its ripe, if it smells like a pineapple its ripe, if it looks yellow then its ripe - the list goes on!!!! I actually use a combination of all of these but i have had the most luck with smelling the pineapple and also looking at the pineapple. The "eyes" also known as the cotyledons on the skin should be big and firm with a nice yellow (not green) hue. Smell the base of the pineapple - it should smell sweet - if you can't smell anything then don't buy the pineapple!!!! Once you get the pineapple home place the pineapple UPSIDE DOWN - yes you heard me right and let it sit for about a day or so. When a pineapple is placed upside down all of the sugar that is concentrated at the base gets evenly distributed throughout the flesh of the pineapple. Trust me - it works. If you don't do this when you cut it open you will see that the riper pineapple pieces are at the base and the flesh toward the leaves tend to be less ripe and often bitter.


I love pineapple freshly cut - i could eat tons at one sitting - hence part of my morning snack today. I love pineapple plain, mixed with yogurt, added to a banana smoothie, grilled with cinnamon or added to my salsas!!! What are your favorite ways to enjoy pineapple??


I've been trying to incorporate different grains into mydiet recently and made a wonderful recipe of quinoa with roasted red pepper tomato sauce served on top of spinach and roasted broccoli and eggplant slices. If you've never tried quinoa is delicious - a perfect grain to try because its actually a complete protein. The key to making quinoa however is to be sure to rinse it thoroughly before boiling to prevent a bitter taste to the grain. What i like about quinoa is how quickly it cooks and how versatile a grain it is. I have seen it used as a breakfast grain, in baking or simply just boiled. It has a nice texture with a slightly nutty flavor. What are some of your favorite grains??? I am hoping to try millet, and barley this week - any suggestions???



I am finding a new inspiration as i read through your blogs - my love of cooking and health has enabled me to broaden my horizons and include foods that i once enjoyed years ago but have strayed away from. Through blogging i have met so many wonderful people and am grateful for all of your words of encouragement!!!!! I am also thinking about changing my blog to worldpress - any thoughts on this or any suggestions???? I'm not the best on the computer so if anyone could help me id appreciate it!!!!!   1. I've just moved to wordpress and it seems ok so far. Rather than move all my old posts there (have no idea how to do that!) I just started afresh, and once you get used to it it's pretty easy to use.

    And as for pineapple - I particularly like the juice and drink it nearly every day with my breakfast :-)

  2. cookie review?! I'm excited! I am glad that blogging has helped you so much. It has helped me a ton too! Just to know that there are other people out there going through the same thing you are and receiving such words of encouragement! I love pineapple!! My favorite ways to enjoy it is just cut and plain. I tried putting it in cottage cheese once and wasn't a fan. I think it's so yummy just by itself. I am jealous that it is chilly where you live. It is still grossly hot here haha

  4. :) Ah, I loved pineapple, I think i still do, I just havent had any all year-stupid reasons, someday I will eat a lot of yummy pineapple and not feel bad about it! About switching to wordpress it seems like a lot of people have been doing it and I'm not sure why...But blogger and wordpress are both nice, so either way! :)

  5. I love the pineapple info! Especially turning it upside down. Never heard that before!! I used to be an absolute pineapple FIEND...was my favorite fruit ever... But lately I haven't had as much of a taste for it? I think it's too sweet or something, I'm not sure, haha.
    I love that you're experimenting with grains and finding inspirations from blogs :) You sound like you're doing very well, and I couldn't be happier to hear that!! My favorite grain is, hands down, bulghur!! Love, love, love it :)
    As for wordpress v. blogspot - wordpress!! I started out with blogspot, and when I moved to wordpress I was shocked at the (amazing) difference!! Gives you a lot more leeway, I find, and it's pretty easy to use, too. And you can transfer all your old posts pretty easily - I think it asked me if I wanted to transfer them automatically. Aaand, last little tid-bit...your readers won't have to enter a captcha to post. Maybe it sounds silly but sometimes I'll read blogspot posts but then not comment because I've had too many captchas for the day! lol.
    And!! of course I will help you with a header :) Just let e-mail me the pictures you want to use and the dimensions you need it to fit, and I'll play with some designs. It might take me a little bit - give me a week or so? The creative juices need to flow, you know? hehe.

  6. Hmm.... my favorite grain?? That´s a tough one :) I definitely enjoy brown rice (white, too), bulgur and buckwheat (although it´s technically not a grain, I know). Amaranth is also very tasty, especially when first cooked and then shaped into patties and baked in the oven - super yumm! Tastes like popcorn to me and super high in Protein, I think like 15g/100g! I´ve been incorporating more grains to my diet, too. In combo with the healthy fats, I definately am feeling a huge difference regarding energy and physical performance! Oh and guess what? I just went and bought some pineapple (pre-cut) - somehow my body was screaming for it the whole weekend.

  7. I love pineapple! It's really yummy mixed in oats and topped with coconut butter for a tropical breakfast.

    Thank you for the upside-down trick, I've never heard it before but I'll definitely try it the next time I buy a pineapple!

    Regarding your favourite grain question, hummm, I can't pick just one, I love them all! Right now I'm regularly using brown rice, millet, both red and white quinoa, bulgur and barley.

    I've recently spotted at the store kasha and spelt berries that I'm looking forward to try.

  9. quinoa is really good huh!! im really happy that uve been challenging urself to try out and incorporate newer grains into ur life. millet is really good too. they have so many great millet mashed potato recipes online too <3
